Seems to me that pasturization only became mandated by law (perhaps necessarily) when the farming practices of cows changed to include growth hormones, chemically treated feed, feeding cows to cows (!), etc., and people, not surprisingly, started getting sick from drinking milk in its raw form. Drinking milk from organically raised, grass fed cows should not pose a health risk and actually have health benefits.
