Parchment Tilapia (thanks Lisa!)

– Tilapia (or Salmon…)
– Fresh Shallots (thinly sliced)
– Heirloom Tomatoes (thinly sliced)
– Corn shaved off the cob (optional)
– Lemon (squeezed and sliced)
– Olive Oil
– S & P

On a piece of foil, lined with parchment paper add all ingredients. Pinch foil to close. Bake at 400 degrees for about 30 mins. Optionally serve with Quinoa or Millet to soak up the juices. That’s it. Enjoy!
