INGREDIENTS
− 1 large organic bone-in skin-on chicken breast
− 1 bunch baby broccoli
− ½ cup brown and wild rice blend
− ½ cup dried cranberries
− 2 scallions
– 3-4 shiitake mushrooms
− olive oil, salt and pepper
INSTRUCTIONS
Roast the chicken breast topped with olive oil and salt and pepper for about 40 mins or until done. Chop or slice very thin. Cook rice in 1 cup of water (or ½ cup water ½ cup chicken broth). Steam baby broccoli and chop into small pieces. Thinly slice shiitake mushrooms. Finely chop dried cranberries, and scallions.
Then, combine chicken, rice, broccoli, cranberries, and scallions in a large bowl. Mix in a small amount of olive oil and add salt and pepper to taste.
