…& it’s really good. It’s Millet Mash.
INGREDIENTS
1 cup millet
3 cups water
1 medium onion
1 small head cauliflower
2 tbsp cold pressed oil (olive, flax, hemp, etc.)
1-2 cloves garlic (optional)
¼ cup arame, soaked for 20 minutes (optional – a huge nutritional boost!)
Unrefined sea salt to taste
INSTRUCTIONS
1. Rinse millet well & drain 2-4 times.
2. Chop cauliflower and onion into chunks.
3. Add millet & water in a large pot & cover with chopped vegetables & salt. Bring to a boil, cover & simmer for 20-30 mins, until the vegetables are soft & millet is cooked.
4. Remove from heat, add the cold pressed oil (& arame), & mash with a large fork or potato masher. For an extra smooth consistency, use a hand blender or a food processor.
