INGREDIENTS
– 1 yellow onion (sliced)
– 2” fresh ginger (sliced)
– 1/4 habanero chile (sliced)
– 6 shiitake mushrooms (sliced)
– 2 organic chicken breasts (bone-in, skin on)
– 32 oz organic chicken stock
– 1/2 cup water
– 1/2 cup dried goji berries (soaked)
– 5 cloves of fresh garlic (finely chopped)
– 1 bunch baby bok choy (sliced)
– 1 cup brown rice (optional side)
INSTRUCTIONS
Combine all except goji berries, garlic, and bok choy. Heat up and bring to a boil. Cover and simmer for about 30 minutes. Take out chicken, skin and shred finely off bone and replace to stock. Resume simmering another 30 minutes. Turn up the heat and add drained goji berries, garlic, and bok choy. Simmer another 5-10 minutes. Chop a bit of ginger (finely chopped) for garnish. Serve with a side of brown rice (or black quinoa) to add to soup at serving time. Serves about 4. It’s easy, it gives you energy, and it makes great left overs! You can freeze it too.
